Filleting Knife
Hi guy's,

Just curious as to what brand fish filleting knife you use and why? I have a Martini and Kershaw which are both OK and had for some time but looking for something far better. I believe Buck and Victronox(sp) both make pretty good filleting knifes. With which ever brand you use, where did you get it from and what was the rough cost?......I'm also going to get a small steel for the boat as it will stop me using the good house one all the time.......Wife, not happy......hehehehe

Hi mate,
I am a chef and used to use a beautiful 8'' Shun as my fillet knife. They are a stunning hand pressed Japanese knife that retail for around $350 each. That knife was lost whilst I was travelling through the Kimberly region of WA. I was devastated (still am) and swore that I would never use one of my good knives for fishing again.

I now use a few F. Dick knives. They hold their edges very welld and are well priced too, retailing around $45 bucks. You do however have to keep them on a steel more often than better knives like the Shun. Being a harder steel I reccomend that you put them over a fine stone after each trip to keep them in mickey mouse condition.

Cheers mate, do you know where you can get the Shun knifes from? I know what you mean about putting them on the stone, I have to do that now after every trip and is a little annoying......Just looking for better quality that can hold it's edge longer...I hate nothing more than blunt knives when filleting, very frustrating...Cheers again....

I have a Shun as well and love it. I dont take it out on the boat though. Nearly all my chef knives are Wustof. The great thing about these is that after about 2 years of using them the steel gets harder andf they stay sharper longer. I still dont use these on the boat though. I dont even nlet my missus use them. Big Grin
They dont put out a good filleting knife though.

I went to Victorinox ($38) wasnt overly impressed with them so went to Swibo ($40) for a year or so. Back in May i saw somw nice Buck ($110) in Cairns and decided to buy a pair to see what they were like. Love them so far. Be interesting to see how they hold up.

Teabag- The knive's you used on the boat when you were up here was a boning one and a filleting one. Both were Buck's.
I got my Shun knife from Knife Kingdom in Cairns. They should still be there in Cairns Central. Say your in the trade and you get 10% off too.

The Shun range sure is nice. They don't make the little 8 '' that I used to have but they have replaced it with another nice knife (unfortunately not in a good fillet shape). One good thing is that the price of them has fallen to a reasonable price now that they are available in retail stores.

I cant remember the brand but i have one knife from Japan that is absolutley great. Had it for quite a few years now and the brand had faded off the side. It stays super sharp for ages. The 2 drawbacks are the price and the fact that it rustsvery easily and has to be oiled after every use. The knife cost around the AU$400 and was not available in Oz at the time.

Some very nice blades there....What model Shun would be the go or should I get a fillet and boning knife? These won't go exactly in the boat as I will use the cheapies for that but for when I get home to fillet up all the fish etc......

I'm liking my Victorinox but I think the key with good knives is to leave them at home... boats kills good blades

Great knife Teabag. I dont own one but have used one before. Its surprising how much difference a curved blade will make. They are one of the best knives on the market. I have the 16cm chefs knife here at home and use it every night. Havnt had to sharpen it for the last couple of months.
